After twelve days of careful fermentation a
process of monolactic fermentation continues for at least one year,
followed by three and a half years in
Slovenian Oak barrels and finally, a minimum of six months in the bottle.

Our prize winning 1997 grape produced one of
the top wines of the century.

Wild mushrooms, chestnuts, figs,
persimmons and berries contribute flavour to the world renowned Brunello di
Montalcino that is produced from our grapes.

Virgin Tuscan Olive Oil DOP
The olives are still hand picked and the
method of extraction is cold pressing, with a natural decantation to obtain
clean transparent oil.
It is the healthiest of oils to be used in
all of your recipes.
When fresh, it has a zesty peppery flavour
enhancing your salad dressings and bruschettas, and when slightly mellowed, you
can even fry pancakes and bake with this lovely oil.
Olive oil is also used for all your
essential oils and body care.

Our extra Virgin Olive Oil is DOP designated.
It is produced only in the Tuscan region from a selection of olives such as
“correggiolo” and “moraiolo”.
